“This is my commandment, that you love one another, just as I have loved you” (John 15:12). To celebrate this Valentine’s Day I thought it would be fun to make a sweet treat with a healthy twist. These cookies are free of dairy, refined sugar (except the chocolate chunks, but you can easily substitute for chocolate sweetened with something else), and filled with pure, organic ingredients. The best part is, they taste amazing. While developing this recipe I had to make quite a few batches to make sure they were perfect. Of course I couldn’t keep all the goodness to myself so I shared with friends and family. Everyone thought they were delicious and never suspected that they were “heathy” cookies. WHAT YOU’LL NEED:

Ingredients:

  • 2 C. organic flour
  • 1 tsp. baking soda
  • 1 tsp. salt
  • ½ C. organic coconut oil
  • ½ C. organic maple syrup
  • 2 organic eggs
  • 1 tsp. vanilla extract
  • ½ C. oat flour (I made my own by grinding oats in a blender)
  • approx. 1 C. ground nuts (I used a blender to grind the nuts as well)
  • chocolate as desired (I used good and gather organic dark chocolate chunks)

Tools:

  • electric mixer (if you don’t have one you can use a hand mixer and a large bowl)
  • large cookie scoop
  • baking stone (if you don’t have one you can use a baking sheet lined with parchment paper)

WHAT TO DO:

  1. Preheat oven to 350°F (190°C).
  2. In mixing bowl combine flour, baking soda, and salt.
  3. Add coconut oil, maple syrup, and eggs. Mix until well combined.
  4. Mix in vanilla and oat flour just until incorporated.
  5. Add ground nuts and mix thoroughly.
  6. Fold in chocolate and drop onto baking stone using a large cookie scoop (I recommend four cookies at a time).
  7. Bake for 12-14 mins. Let rest for 5 minutes then transfer to cooling rack.

*this recipe makes approximately 12 giant cookies
