Your breakfast sets the tone for your day. I’ve found that eating something healthy in the morning helps me to make better choices throughout the day. During the search for the perfect breakfast my sister introduced me to parfaits. Now I know what you’re thinking. Parfaits have been around forever, I know. However as a child I never liked yogurt so I avoided anything with yogurt in it like the plague. Well my friends, taste buds change and now I’m positively obsessed with the stuff. I created this easy and convenient breakfast for anyone on the go. Whether you’re catching the bus for school or running out the door for work, these parfaits make breakfast simple, healthy, and quick.
WHAT YOU’LL NEED:
- 32 oz of your favorite yogurt (I used vanilla Chobani)
- 1/4 cup of flax seed (I used pre-milled but if you have the seeds I recommend running them through a food processor first)
- 1/3 cup of granola (I used organic but if you don’t have access to that just try to use a granola that has pure ingredients)
- About 1 cup of your berries of choice (my personal favorites are strawberries, raspberries, and blueberries)
- Silicone molds (if you don’t have silicone you can always use a lined cupcake tin)
WHAT TO DO: (pay attention guys this is really intense)
- Wash and cut fruit (here we go)
- Fill molds 3/4 full with yogurt (that was hard, I know)
- Decorate your yogurt with granola, fruit, and flax seed (whew, I’m exhausted)
- Freeze molds overnight (so much work)
That’s it! Once they are frozen solid you can store them in a container or freezer bag for pretty much forever.
TIPS:
I found it helpful to push the fruit and granola into the yogurt to make sure they freeze together.
And after all that hard work you deserve to mix any leftover fruit and yogurt together and have a delicious healthy snack.
